West Hollywood has some pretty rad restaurants in their district, but just yesterday, one of the most hotly anticipated eateries opened its doors. Lindy & Grundy has been steadily gaining buzz—this “old-fashioned butcher shop sells ONLY pastured meats from animals raised on small, local, sustainable ranches,” and their practices adhere to the snout-to-tail waste-note mentality that guarantees as little waste as possible.
