If California is the avocado empire, than Gaby Dalkin is its reigning queen. The L.A.-based food blogger (What's Gabby Cooking) has devoted a great deal of her professional career to proving that the avocado has a lot more to offer the world than just being the tortilla chip's sidekick. Enter Absolutely Avocados, Dalkin's very first cookbook, showcasing all of her greatest avocado recipes. A couple standouts: the Crab and Avocado Quesadilla, and, our personal favorite, the Avocado Fries with Chipotle Dipping Sauce.
But, rather than have us tell you about it, you should probably just RSVP to Dalkin's cooking class at the New School of Cooking next week, in which she'll demonstrate how to make her fave dishes from the book, and send you off with your own signed copy. Hungry yet?
