Level V: Create A Homemade Dessert In Just 15 Minutes

Making dessert can be super-intimidating, especially when baking is involved. But, thanks to this 15-minute stovetop recipe, you'll always have a sweet treat on hand. It only requires six ingredients (most of which you probably already have in your pantry!), and if you're iffy on raisins, you can sub in another dried fruit or leave them out altogether. Give it an ice cream-style spin by adding fun toppings like dried coconut, chocolate sauce, and fresh fruit. Yum!

Rice Pudding

1 1/2 cups whole milk, or 1 cup water and 1/2 cup coconut milk
1 cup cooked cold or room temperature short- or long-grain white rice
1/4 cup raisins, optional
2-4 tbsp brown sugar (depending on how sweet you like your desserts)
2 pinches salt
1/4 tsp vanilla extract

1. In a saucepan, combine milk or water and coconut milk, cooked white rice, raisins, sugar, and salt. 2. Bring the mixture to a boil, then lower the heat and simmer over low heat, stirring, until the liquid is absorbed and the pudding is thick and creamy, about 15 minutes. Do not overcook; pudding will continue to thicken as it cools. 3. Turn off the heat and stir in the vanilla extract. Serve warm or at room temperature.
