The Delicious New Way To Eat Avocados

Much like Brussels sprouts, savory doughnuts, and kimchi in years past, avocados are one of those weirdly trendy foods that seem to turn up everywhere. We're not knocking it. Actually, we're pretty pumped about the fruit's (yep, avocados are a fruit) cameo at sushi night, on toast, and even in eye cream. But, at this point, we sort of assumed we'd hit the limit on surprising new ways to use avocado. These creamy popsicles, which are chock-full of avocado goodness, coconut water, and Malibu rum to boot, prove otherwise. Sure, some might balk at the wackiness — and, uh, greenness — of the whole avocado-as-a-frozen-dessert phenomena, but they clearly haven't taken a lick yet. Whip up a batch, share it with the skeptics, and we're willing to bet they'll come back for seconds. Avocado Coconut Rum Popsicle
Serves 8 Ingredients
1 ripe avocado
1 lime (zest and about 1 1/2 tbsp juice)
1/3 cup honey
2 cups coconut water
1/2 cup Malibu rum Instructions
1. In a blender or food processor, combine all ingredients except for rum. 2. Blend until thoroughly combined. 3. Stir in rum. 4. Pour mixture into popsicle molds, and freeze overnight or as directed.
