Finding good weeknight recipes is tough.
Recipes that say they’re 'quick' end up involving a whole load of marinating time or advance preparation – something you inevitably only realise when you're halfway through. And while I know that many of those Ottolenghi-style recipes with loads of different herbs and spices are actually really easy to make, isn't it so much better to try them out at the weekend when you're not so tired that you leave off three or four ingredients by mistake?
Ahead, we've got a recipe that's so simple, it's only got five ingredients – which you've probably already got in the fridge.
