The perfect example of the saying "what grows together, goes together" is tomatoes and peaches. It might seem counterintuitive, but tart tomatoes are the perfect pairings to sweet, yellow peaches — especially when both are a little too ripe and messy to eat by hand.
Tomato, Peach, & Basil Salad
Serves 2 Ingredients 1 heirloom tomato, sliced into about 1/4-inch slices
1 fresh yellow peach
1 bunch basil leaves
1-2 tsp balsamic vinegar
Freshly ground black pepper Instructions 1. Cut the peach in half and remove the pit.
2. Slice the peach into slices — the same size and thickness as the tomato slices.
3. Alternate tomato and peach slices and tuck a basil leaf between each.
4. Drizzle with balsamic vinegar
5. Sprinkle with pepper before serving.
