No-Cook Tomato-Peach Salad

The perfect example of the saying "what grows together, goes together" is tomatoes and peaches. It might seem counterintuitive, but tart tomatoes are the perfect pairings to sweet, yellow peaches — especially when both are a little too ripe and messy to eat by hand. Tomato, Peach, & Basil Salad
Serves 2 Ingredients 1 heirloom tomato, sliced into about 1/4-inch slices
1 fresh yellow peach
1 bunch basil leaves
1-2 tsp balsamic vinegar
Freshly ground black pepper Instructions 1. Cut the peach in half and remove the pit.
2. Slice the peach into slices — the same size and thickness as the tomato slices.
3. Alternate tomato and peach slices and tuck a basil leaf between each.
4. Drizzle with balsamic vinegar
5. Sprinkle with pepper before serving.
