Cheesy Vegetarian Breakfast Bake
Serves 6-8 slices
Basic pancake batter, prepared
1/2 cup half & half
1/4 cup grated Parmesan cheese
1/2 cup shredded swiss cheese
1 tsp dried onion flakes
1/4 tsp paprika, any variety
1/2 tsp salt
Pepper to taste
1. Preheat oven to 350ºF.
2. Spray the bottom of a 9” deep-dish pie pan with cooking spray and set aside.
3. Prepare the pancake batter and pour it into the bottom of the pan.
4. Whisk together the eggs, half and half, salt, and parmesan cheese. Then, whisk in the shredded swiss cheese and onion flakes.
5. Pour into the pie pan on top of the pancake batter. Bake for 45 minutes or until firm and nicely browned. A toothpick inserted in the middle should come out clean.
