By the time August rolls around, the last thing we want to do is spend time in our extremely hot kitchens. Turning on the stove or the oven makes us want to beeline for a breezy, beachfront restaurant immediately. (If only we could afford that kind of pampered dining experience on the regular.) Fortunately, there’s a whole slew of fast, super-easy summer recipes that you can make without any heat whatsoever. Take that, warm-weather cooking woes! Beat the end-of-summer swelter with these five refreshing, no-cook recipes. No-Cook Tomato-Peach Salad

The perfect example of the saying "what grows together, goes together" is tomatoes and peaches. It might seem counterintuitive, but tart tomatoes are the perfect pairings to sweet, yellow peaches — especially when both are a little too ripe and messy to eat by hand.

Tomato, Peach, & Basil Salad
Serves 2


1 heirloom tomato, sliced into about 1/4-inch slices
1 fresh yellow peach
1 bunch basil leaves
1-2 tsp balsamic vinegar
Freshly ground black pepper


1. Cut the peach in half and remove the pit.
2. Slice the peach into slices — the same size and thickness as the tomato slices.
3. Alternate tomato and peach slices and tuck a basil leaf between each.
4. Drizzle with balsamic vinegar
5. Sprinkle with pepper before serving.
