The Perfect Homemade Pizza For Impatient People

So, the First Lady of the United States challenged us to come up with the five healthy ingredients everyone should have in their kitchen — as part of her #GimmeFive initiative. I talked to experts, and we arrived on these delicious, versatile, affordable wins: Broccoli, feta cheese, pasta, olive oil, and avocado. Then, I asked my favorite food bloggers to create recipes using the ingredients. Never one to shy away from a challenge, I assigned myself feta. I've usually got feta on the brain anyway, so I jumped at the opportunity to incorporate it into a five-ingredient dish.

I put on my Impatient Foodie hat and came up with an easy pizza recipe that can be made in less than 30 minutes. Using pre-made dough helps to streamline the process and gets you on your way to a healthy, yummy dinner in less time than it takes to watch an episode of The Real Housewives. Also, I tested this with gluten-free, store-bought dough — it worked beautifully.

Five-Ingredient Impatient Pizza
Yields one small pizza

Ingredients
Pre-made frozen pizza dough, thawed if necessary
2 tbsp extra virgin olive oil, plus an extra 1/2 tsp
1 shallot, sliced lengthwise
2 big handfuls of baby spinach
1/4 cup of feta

Instructions
1. Preheat the oven to 375°F.

2. Make a ball of pizza dough about the size of a baseball and roll it out into a circle. Crimp up the sides. Pour 1/2 teaspoon of olive oil in the middle and spread it all over the dough, avoiding the edges. Set aside.

3. Slice your shallot lengthwise, following its natural lines.

4. Put 2 tablespoons of olive oil in a pan and add in the shallot. Cook until they are soft and translucent, about 5 to 10 minutes, stirring constantly. Remove from the heat and set aside.

5. Put your spinach in a colander and heat up some water in a kettle. When the kettle is boiling, pour it over the spinach to wilt it. Make sure to completely drain the water from the spinach. When the spinach is cool enough to handle, you can squeeze it between paper towels to remove any excess water.

6. Spread the spinach onto the pizza dough, followed by the shallots, and then scatter 1/4 cup of feta all over.

7. Cook in a 375°F oven for 15 to 20 minutes, until the dough is golden brown.

8. Drizzle with a little more olive oil (if desired). Enjoy!

Note
: You may want to add salt, but feta tends to be very salty already, so taste before adding.
