No-Cook Summer Fruit Parfait

When it's hot outside, we want a recipe that we can throw together quickly using ingredients we already have in the fridge. That's where parfaits come in. Not only can you eat them for breakfast, as a snack, or for dessert, but they are fast, easy, and flexible. In fact, most of the time, there's little to no prep involved. If you're a parfait newbie, try the below flavor combo for a fresh and simple summer treat. Greek Yogurt, Mango & Blueberry Parfait
Serves 1 Ingredients
3/4 cup Greek yogurt, plain or vanilla (0%, 2%, or full fat)
1/2 mango, peeled and diced (about 1/2 cup)
1/3 cup fresh blueberries
1 tbsp toasted coconut or granola, optional Instructions
1. Layer 1/4 cup yogurt in a glass or parfait cup. 2. Top the yogurt with mango, then another 1/4 cup yogurt. 3. Add the blueberries and then the rest of the yogurt. 4. Sprinkle with coconut or granola, if desired
