Corn, Avocado & Lime Salad
1 ear fresh, sweet yellow or white corn
1/2 avocado, peeled, pitted, and diced
1/3 cup cooked or canned black beans, rinsed
2 tbsp chopped fresh cilantro
1 fresh lime, squeezed
Red pepper flakes
1. Scrape the corn kernels off the cob and into a bowl.
2. Add the avocado, black beans, cilantro, and lime juice.
3. Season to taste with salt and red pepper flakes.
