Writing food-safety plans for David Chang (owner of the Momofuku Restaurant Group), Christina Tosi indulged in her baking bent off hours … until David tasted her brownies and threw her into the kitchen full-time. Before she knew it, she was creating dessert menus for Momofuku Ssäm Bar, Noodle Bar, and Ko before opening Milk Bar, one of New York’s most beloved sweeteries.

What skill or habit do you think is vital for success?
“Insane, rock-hard work ethic: ‘Kill yourself or die tryin’ mentality.”
What moments on the job do you find most rewarding?
“The end of every productive day doing what I love with people I’d do anything for. A fistful of Compost Cookie dough is always a great reward, too!”

Who’s your working girl inspiration?
“All of my fellow milk maids and men. We’re a family. We’re a team. We push each other every day to be better at our jobs.”
