A Healthy Snack To Enjoy Post-Pumpkin Carving

Pumpkins are filling up the farmers' markets, and there are so many ways to enjoy them. Besides the seasonal favorites (pumpkin pie, pumpkin spiced latte, and the list goes on), we can't forget about the seeds! The seeds of a pumpkin are incredibly high in antioxidants and other important vitamins; plus they're the perfect nosh — for a party or movie night. Making them on your own is less expensive and helps keep sodium at bay. Click through to see how easy it is.
1 pumpkin (small to medium)
Olive Oil
1. Carefully cut off the top of the pumpkin.
2. Scoop out seeds then rinse, removing all of the pulp.
3. Bring a pot of water to a boil.
4. Add a few dashes of salt and the seeds, then reduce to a simmer over medium-high heat.
5. Let simmer for 10 minutes.
6. Pat seeds dry, and lay them out on a baking sheet.
7. Mix with 1 teaspoon of olive oil and generously salt, then arrange flat in the pan & stir.
8. Roast at 325 degrees Fahrenheit for 8-10 minutes then take them out of the oven, & stir again
9. Roast for another 6-8 minutes, until golden brown.
