2 tbsp roma tomatoes
Olive oil
Garlic salt
2 eggs
Shredded mozzarella
Grated parmesan cheese
Pinch of shredded mozzarella
Top with grated parmesan
Instructions
1. In a small bowl, combine arugula, tomatoes, olive oil, garlic salt.
2. Preheat oven to 400 and butter 2 ramekins.
3. Add a large spoonful of the salad mixture, one egg, pinch of mozzarella & top with parmesan, salt & pepper.
4. Bake for 8-10 mins.
