A 5-Ingredient Shrimp Salad Recipe To Make Tonight

We're always craving light and healthy food in the summertime, that's where this salad comes into play. It has minimal ingredients (five to be exact), but when combined with the roasted shrimp for a good protein boost, it also fills you up. Peeled and deveined shrimp (we recommend 6-8 per serving)
Arugula (handful)
Olive oil
Lemon juice
Fresh grated Parmesan cheese
Salt and pepper
1. Preheat oven to 400 degrees Fahrenheit.
2. Place shrimp on a baking sheet, then drizzle: olive oil, lemon juice, salt, and pepper, and toss.
3. Cook for 5-6 minutes.
4. Drizzle arugula with olive oil, lemon juice, and Parmesan cheese.
5. Top with shrimp, salt and pepper to taste.
