Fast & Delicious Roasted Chicken Recipe With Tahini

This flavorful tahini marinade will give your boring old roasted chicken new life. Fresh herbs and sesame seeds take this recipe way, way up. Served with a green salad, it's the perfect weeknight meal to end your day.

Tahini Chicken
Makes 4 servings

Ingredients
1/2 cup tahini
3 cloves garlic, minced
1 1/2 tsp ground cumin
1/2 tsp cinnamon
1/4 tsp cayenne pepper
2 tbsp honey
Juice of 3 lemons
4 tbsp olive oil
2 tsp salt
Freshly ground pepper, to taste
1/4 cup water
4 chicken breasts
1 onion, sliced
1/4 cup parsley leaves, chopped
1/4 cup mint leaves, chopped
Sesame seeds, for garnish (optional)

Instructions
1. In a large bowl, whisk together tahini, garlic, cumin, cinnamon, cayenne, honey, lemon juice, two tablespoons of the olive oil, salt, and pepper. Whisk in 1/4 cup water or slightly more, to thin marinade.

2. Place chicken breasts in marinade and toss to coat evenly. Cover and place in fridge for one hour.

3. Preheat oven to 375°F. Place the other two tablespoons of olive oil in a cast-iron skillet over medium heat. Sauté onions until translucent in color, or about four minutes. Remove the chicken breasts from the marinade and place in the skillet to brown, for two minutes on each side. Spoon 1/4 cup of marinade over the chicken and place in the oven to roast until done, about 15 to 20 minutes.

4. To serve, top with fresh, chopped parsley and mint, and sprinkle with sesame seeds if desired.
