Tavern on Rush: Easy Apple Caramel Pie

Who said all pies have to be round? This easy recipe pays homage to one of our favorite seasonal treats: the caramel apple.

4 cups peeled, sliced Fuji Apples
1 cup brown sugar
Ground cinnamon
1/2 stick butter

For batter
1/2 stick butter
1 1/2 cups all-purpose flour
1 1/2 cups milk
1 tsp salt
1 tsp baking powder
1 1/2 granulated white sugar
1. Preheat the oven to 350 degrees.
2. Combine the sliced apples, 1/2 cup brown sugar, and butter. Mix well.
3. Roast in a small nonstick roasting pan or cookie sheet for 10 minutes or until the apples caramelized. Remove from oven.
4. Put the butter in a 3-quart baking dish and place in oven to melt.
5. Mix 1 cup sugar, flour, and milk slowly to prevent clumping. Pour batter mixture over melted butter. Spoon apples on top, gently pouring in extra caramel. Sprinkle top with sugar and ground cinnamon.
6. Bake for 40 to 50 minutes. Batter will rise to top during baking.
7. To serve, scoop onto a plate and serve with scoop vanilla ice cream.
