Matthew Oetting, BLT Steak

With shaggy hair and a few-days-old shadow, one would have never suspected that 32-year-old Matthew Oetting has the culinary pedigree of a true master. From Union Square Cafe to STK in New York, Oetting has done a stint at some of the Big Apple's coolest restaurants. But, when it came time for him to settle his family (sorry, ladies!), he jumped on the chance to come south. Says Oetting, "Now was a good time for us to move, especially to sunny Florida!" After rocking it at the Trump Soho, Oetting craved something a little more meaty: "I love the steak house concept, and knew that BLT Steak is one of the best, so I couldn't turn it down."
