Also on the Vía Primavera is the Pergamino Café. Recently opened by a family of old-school Colombian coffee farmers, it takes its brews very seriously. Every cup of coffee is made with fresh ground beans, weighed and heated to super-specific parameters, and served only after a full minute of resting. Every latte is like a science project.
