These shrimp rolls are the ultimate celebration of summer. They manage to be light while still creamy, and pair perfectly with a cold beer and beach-front view. Whip up a few batches of the shrimp mixture and lunch is served. Click through to see how you make it!
3 tbsp mayonnaise
1 tbsp dijon mustard
1 tbsp cornichon brine
1 lb cooked, peeled large shrimp, chopped
1/4 cup cornichons, chopped
2 tsp fresh tarragon, chopped
4 hot dog buns
4 romaine leaves
1. In a bowl, combine: mayo, mustard, cornichon brine, then mix
2. Add chopped shrimp, cornichons, and tarragon
3. Line hot dog buns with romaine leaves
