What’s your professional background and how did you get into the field?
"I have always loved food. Both of my parents cooked at home a lot and it was always a treat to go out to eat. I used to play restaurant as a kid in the house, and when I was 10 my mother opened up a small place focusing on dishes from around the world. I loved helping her in every way. Cooking, serving, everything. I remember the dish machine was my favorite. As soon as it was legally possible I started washing dishes in a little French bistro and worked my way up from there."

What drawbacks does your profession have if any?
"I'm also an active musician, so one major drawback is the hours. It's next to impossible to take a weekend night off to play a gig, and even more unlikely to find a venue that wants to hear you in the early afternoon before work. I couldn't be without either profession and seem to work it out, though. It's not unheard of to bring my equipment to work and head off to the show stinking of onions."

What are your future career plans?
"I am currently really happy at B. We put out some wonderful food and the atmosphere is genuinely welcoming. I can see myself being here for a while. I have always shared a dream with an old friend of mine of having a little kitchen on a boat. With a set nine-course rotating menu that does a four-hour tour of the water. I'm getting glossy eyed just thinking about it."
