Here's Where You'll Find Chelsea Leyland On A Friday Night

It's a fact: Athena Calderone is a curator of all things gorgeous. Her breathtaking home decor, delicious recipes, and eye for style inspired her to create EyeSwoon, a hub for home and food inspiration. Now, It Girl Calderone will be taking us to New York's need-to-know spots and introducing us to the coolest people around. This post originally ran on October 30.
Chelsea Leyland, British transplant and uber-fashionable DJ on the rise, happens to be one of my closest girlfriends and very much of a kindred spirit. Though we are ten years apart in age, we both have a similar sensitivity where we can understand and relate to one another viscerally.

We also both love food, sampling the newest BK restaurants regularly with our significant others, and eat much more than our little bodies dictate. I was super excited when she agreed to be my first feature for the new Snoop section of Eyeswoon. I asked Chels to create a simple meal for us at her incredible and eclectic Williamsburg apartment that she shares with her boyfriend Ben. Upon my arrival, I was blown away by the beauty of what she created: the veggies so bright, vibrant, and separated so precisely and with obvious care — just beautiful!

Kale, soy nuts, pumpkin seeds, sunflower seeds, avocado, goat's milk feta, cherry tomatoes, shredded carrots, and quinoa. When asked about her favorite tools of the kitchen trade, Chelsea says, "I can't live without my veggie peeler."

The dressing was a lemon and mustard vinaigrette and the quinoa was cooked with a touch of oil and spring onions which was then soaked in Meyer lemons.

“Kale is one of my favorite vegetables. I make a kale salad at least once a week and I love adding interesting nuts and seeds to salads, as it not only looks beautiful but tastes delicious and adds a crunch. I love to use Meyer lemons where possible as they have such a unique taste and always complement richer favors like the goat's milk feta that I added to the salad.”

“I feel a sense of achievement when I create a great meal. It feels a lot more special knowing you’ve made a meal with your own hands and where all the ingredients have come from. You put so much love and effort into it yourself. If I ordered the same thing at a restaurant I often think I wouldn’t like it as much as when I make it at home.

When shopping for food the things I always pick up are kale, blueberries, pomegranates, almonds, and Manchego cheese. The herb I cook with most is thyme and always garlic. I have to have mustard in my fridge at all times!

I always bring olive oil spray back from London that you can't get here. A few things that are always stocked in my pantry are elderflower cordial, herbed salt, and peanut butter.”

“I value my breakfast. I eat right away in the AM: yogi green tea, homemade green juice, organic peanut butter on sourdough toast with slices of cucumber. I love sourdough toast topped with cottage cheese and drizzled with agave as a snack.

"Acai freezer packs for morning smoothies are always in my freezer. I make mine by combining the acai with two bananas, blueberries, kale, flax oil, agave, and almond milk."

My go to dinner party recipe is...
"An English roast — chicken with veggies, roasted potatoes, parsnips, shallots, Brussels sprouts, roasted carrots."

Kitchen trick?
"I always always pour boiling water over and inside the bum of a chicken, my mum taught me to do that."

5 minutes before guests arrive I'm...
"Lighting the candles trying to get rid of the smell of the food. I'm already dressed and ready to go."

When no one is home but me...
"I love to bathe and play music really really loud. I never have the volume that loud when Ben's around."

What are your three favorite restaurants in NYC?
"Franny's, Allswell in Williamsburg, Fat Radish."

Favorite brunch spot?
"Five Leaves."

Favorite restaurant when I travel...
"South of France, Le Bistrot Du Paradou...amazing!!! Tulum, El Tabano."

If I could get my hands on one restaurant dish recipe it would be...
"The sausage at Franny's!"

What's something people would be surprised to know about you?
"That I LOVE heavy metal! Anthrax, Slip Know, Pantera."

What are five artists that are currently in rotation when you're hanging at home?
"Etta James, John Standberry Jr, Lee Moses, Albert King Smith, Jimmy Reed."

“The items I most treasure in my home are my vintage scales, which were from Ben as a present for my birthday two years ago, and this zebra painting in the bedroom.

The style of my home is kind of a mixture of everything —cozy mix of industrial and flea market finds. We tend to paint everything black.

My favorite place to shop for home furnishings is the Brooklyn Flea and the junk store here in Williamsburg."

“Candles can get a bit sickly if you always burn the same scent, so I like to change it up. We have three or four candles that we rotate: West Third Brand — Belgium Linen (a store just off Bedford here in Brooklyn), Diptyque — Figuier or Feu de Bois, and Le Labo — Santal 26. I also love white Lily’s. They smell amazing!”

“I love to sit at home and flip through my anatomy books! I have a whole collection.

Our biggest splurge is probably buying art. I love this Kehinde Wiley piece.”
