Level IV: How To Make Fried Rice In A Flash

Everyone
loves a tasty, greasy fried rice from the local takeout joint, but it’s
also a dish that can be easily (and more healthily) made at home! Throwing together
fried rice is also a great way to use leftover rice, because you want the grains
to be a little tough. Toss in some
fresh chopped vegetables, soy sauce, and a little ham, and you’ve got yourself the
perfect, quick meal to serve to guests, or enjoy solo while watching Netflix in your PJs.       

Fried Rice
Serves 2 as a main dish 

Ingredients
2 tsp vegetable oil
1/2 cup chopped leftover (cooked) ham or chicken
1/2 red pepper, diced
1/2 cup frozen green peas
2 cups cooked long grain white rice
1/3 cup sliced green onions
2 eggs, beaten
1 tbsp soy sauce, or to taste

Instructions
1. Heat oil in a large nonstick skillet or wok over medium-high heat. Add red peppers and cook for 3 minutes or until tender.

2. Add the cooked ham and peas and stir until heated through, then add the rice and green onions, and cook while stirring for 5 minutes. 3. Push rice mixture to the sides of the pan, forming an empty spot in the center. Pour the egg in the middle of the pan, and cook and scramble with a wooden spoon, stirring in the rice as the egg becomes firm. Stir in soy sauce and serve.
