3 Pasta Recipes To Get You Through The Snowpocalypse

When the temperature begins dipping well below our comfort level and the wind-chill factor is almost enough to make us pack our bags and officially move to a warm and sunny region down south, we are often comforted by life's simple pleasures. That's where a hot and hearty bowl of pasta comes in. From noodles coated with a light cream sauce or dressed with a nuanced tomato ragu to a rich and meaty pasta bolognese, we have a soft spot in our hearts (okay, our bellies) for the many familiar and delicious flavors of pasta.  Whether it's a delicious weeknight dinner you're after or a Sunday supper that can double as lunch on Monday, the three pastas below will satisfy any cold-weather comfort-food desire.

Creamy Mushroom Pasta
Butter, cheese, and earthy mushrooms form the base of this addictive dish. Enjoy it with someone special, or just make a batch and keep it all to yourself while you binge-watch Transparent this weekend. This is a judgment-free zone.
Tomato-Confit Pasta
Made with only three ingredients and minimal effort, this pasta is an all-around, crowd-pleasing favorite. Confiting the tomatoes (which sounds complicated but is actually simple) adds layer upon layer of flavor. We love this pasta because it can be made year-round and doesn't depend on using tomatoes in the peak of their season — not that we don't recommend trying it with super-fresh farmers'-market tomatoes when the time is right.
Poblano Bolognese Pasta
Of the three pastas featured here, this one boasts a few more ingredients and a couple more in-depth steps — but trust us when we say it is worth every effort. Originally conceived as a staff meal at a Soho restaurant, the dish ended up going on the regular menu, and it's been a standby ever since. Make it once, and you'll see why.
