A healthy food truck? Finally! Not that we don't mind being a little gluttonous every once in a while, but The Little Salad Truck is definitely going to help us keep our waistlines in check. Recent Yale grads Etkin and Jerry already operate two successful brick-and-mortar establishments in New Haven, Connecticut, but we're so glad they decided to share a little lettuce love on the streets of Chicago.
