Hosting a brunch sounds lovely in theory, but the logistics can be overwhelming. Between the long work week and last night's #TGIF festivities, you barely have the energy to turn on the stove come Saturday morning, let alone whip up an enviable morning meal. But, a great brunch doesn't have to mean pulling out all the stops, according to chef and owner Andrew Feinberg of the popular Brooklyn restaurant Marco's.
His brown-butter eggs recipe is so simple, you can make it for weekday breakfasts, too. You probably already have the ingredients in your kitchen, so there's no trip to the grocery store and more time to sleep in. Here's how to master gourmet scrambled eggs, lazy-girl style. The only difficult task is deciding who will do the dishes.

Brown Butter Eggs
Serves 1

Ingredients
3 eggs
1 tbsp butter
Salt and pepper, to taste
Olive oil, to taste

Instructions
1. Crack 3 eggs into a bowl. Whisk until frothy, and season with a pinch of salt and pepper.

2. In a nonstick skillet, melt 1 tablespoon butter. Let the butter sizzle and begin to brown. Remove from heat to allow the butter to cool.
3. Put the skillet back onto low heat and add the eggs. Stir the eggs over low heat with a spatula until they are loosely scrambled.
4. Serve the eggs with toast (grilled is best) and grated Piave cheese over the top. Finish with a drizzle of good olive oil and a crack of black pepper.
