Chilled Avocado & Cucumber Soup
1 ripe (or slightly overripe) avocado
1 large cucumber, peeled
½ cup fresh dill, chopped (more if you’re a big dill fan)
1 tbsp lime or lemon juice
1 cup buttermilk
¾ cup vegetable or chicken broth
Salt and pepper to taste
Chop up avocado and cucumber into (approximately) 1-inch chunks.
Throw all ingredients into a large mixing bowl and stir until everything is evenly distributed.
