Here's How To Make A Week's Worth Of No-Cook Meals With One Rotisserie Chicken

We are constantly on the hunt for faster and easier ways to keep our kitchen efforts to a minimum — especially during these, not so chill, summer months. So embracing the no-cook lifestyle was a seasonal no brainer; we've tackled breakfasts, lunches, dinners, and even an all-encompassing no-cook grocery hit list. And just when it seemed like we had hacked the hell out of all potential summer meal strategies, a golden and crispy-skinned light bulb went off: pre-cooked, store-bought rotisserie chicken.

Regardless of schedules (busy or bored) and living situations (S.O.s or solo), picking up a whole, already made rotisserie chicken from a nearby grocery spot is an essential time- and budget-saving move. Not only is this pre-cooked poultry fairly affordable (we scooped one up for $6.99), but the potential for a week's worth of effortless, delicious, and customizable meals teeters on pretty endless. Meals that — did we mention? — require zero cooking. So, armed with a succinct shopping list (featured ahead), we decided to test out the five meals one bird method for ourselves. Chicken Taco With Kale-Scallion Slaw & Sriracha Aioli
Makes 2-4

Ingredients
1 cup rotisserie chicken (preferably wing meat), shredded
2-4 corn tortillas
1 avocado, halved and sliced
1 cup kale, deveined and chopped
2 tbsp scallions, thinly sliced
1/2 lime, juice
2-4 tbsp Greek yogurt
1-2 tsp Sriracha (or hot sauce of choice)
Salt and pepper, to taste

Instructions
1. Strip a section of your rotisserie chicken, shred with your fingers or a fork (leaving skin on is optional), and then place aside.

2. Place chopped kale and scallions either in a bowl or sealable plastic bag and season with lime juice, salt, and pepper — massage the mixture until softened and well coated.

3. In a small bowl, combine greek yogurt and Sriracha (or hot sauce of choice).

4. Layer corn tortillas between moist paper towels and microwave for 30 seconds — then assemble your tacos by tucking the above ingredients inside the tortillas as desired.

Chicken Kale Salad With Avocado, Walnuts, & Apples
Serves 1

Ingredients
1 cup rotisserie chicken (preferably breast meat), sliced
2 cups kale, deveined and chopped
1/4 cup carrots, shredded
1 tbsp scallions, thinly sliced
1 tbsp walnuts (or other nut of choice), chopped
1/2 small apple, thinly sliced
1/2 avocado, sliced
1 tbsp olive oil
1 tsp balsamic vinegar
Salt and pepper, to taste

Instructions
1. Strip a section of your rotisserie chicken, slice lengthwise into pieces (leaving skin on is optional), and then place aside.

2. Mix kale, carrots, and scallions in a small bowl and dress with oil and vinegar (massage in to soften the mixture).

3. Arrange chicken, avocado, walnuts, and apples atop kale mixture and season with salt, pepper, and additional drizzles of oil and vinegar as desired.

Chicken Sandwich With Walnut Pesto & Avocado
Makes 1 sandwich

Ingredients
1 cup rotisserie chicken (preferably breast meat), sliced
2 slices of whole wheat bread, toasted (optional)
1/2 avocado, sliced
1/2 cup kale, deveined and chopped
1/4 cup of walnuts (or other nut of choice)
1/2 cup parsley
1/4 cup olive oil
2 scallion stalks (or two garlic cloves)
1/2 lime, juice
Salt and pepper, to taste

Instructions
1. Strip a section of your rotisserie chicken, slice lengthwise into pieces (leaving skin on is optional), and then place aside.

2. For pesto, place walnuts, parsley, olive oil, green onions, and salt and pepper into a food processor and pulse until paste-like (add water or more olive oil for a thinner consistency).

3. Meanwhile, toast the bread and slice the avocado. Finish by spreading desired amount of pesto onto each toasted half, then cover with kale, layer on avocado, and finish with chicken slices. Sandwich together, slice, and enjoy!

Mango-Walnut Chicken Salad With Greek Yogurt & Scallions
Serves 1

Ingredients
1 cup rotisserie chicken, cubed
1 cup kale, deveined and chopped
1 tbsp scallions, thinly sliced
1/2 mango, peeled and cubed
2 tbsp walnuts, chopped
1-2 tbsp Greek yogurt
1/2 lime, juice
Salt, pepper, and paprika, to taste
Drizzle of olive oil and balsamic vinegar (optional)

Instructions
1. Strip a more solid section of your rotisserie chicken, cube into bite-sized pieces, and then place aside in medium sized bowl for mixing. Add in cubed mango, chopped walnuts, and half of sliced scallions. Then cover and coat with Greek yogurt and lime juice (adding more or less yogurt depending upon the amount of sauciness that you prefer). Season with salt, pepper, and paprika to taste.

2. Serve over a bowl of chopped kale with a drizzle of oil and vinegar, if desired.

Quick Chicken Soup
Serves 1

Ingredients
1 cup rotisserie chicken, shredded or cubed
1 1/2-2 cups chicken broth
1 tbsp carrots, chopped
1/2 tbsp scallions, thinly sliced
1/2 tbsp parsley, roughly chopped
1/2 lime, juice
Salt and pepper, to taste
1 tsp Greek yogurt (optional)

Instructions
1. Strip a section of your rotisserie chicken, shred or cube into pieces (leaving skin on is optional, but encouraged for added flavor here), and then place into small bowl. Fill bowl with broth, carrots, and scallions, then microwave on high for 2-3 minutes. (Optional: Store the soup in your fridge overnight and enjoy cold once flavors have melded.)

2. Remove from microwave, season with salt, pepper, parsley, a squeeze of lime juice, and a dollop of greek yogurt for extra creaminess (if desired).
