NoMI Kitchen at the Park Hyatt may not be a sushi restaurant per se — but anyone who has had its delectable (and maybe a tad pricey) sushi would agree that it is some of the best in the city. You just can't put a price tag on freshness. In fact, one of the things we like best about the selection is the fact that you can actually taste the fish — it's not glopped up with 10 sauces, which can make you think: "What are you hiding?" Chef Ryan LaRoche says, "In my experience, the beauty of sushi is its simplicity. Drowning it in sauce is not necessary provided you have done your homework in sourcing the best possible ingredients. The best wasabi, the best pickled ginger, and the highest quality soy sauce are all you need."
