Chef Franklin Becker of Little Beet suffers from Type 2 diabetes. He partnered with food writer Peter Kaminsky to shatter the fat stereotype in a just-released cookbook, Good Fat Cooking. Using Mediterranean cuisine as inspiration, Becker has devised a series of rustic recipes that celebrate healthy fats. (Expect to see a lot of delicious staples such as olive oil and avocado.)
